I'm in need of a "good" egg-free and milk-free cake recipe for our daughters first birthday. I found a few on-line, but after trying one of them it was horribly dry and rubbery (not the texture we were looking for).
We're not quite sure if she has allergies, but because some family members do have them, our Dr. advised us to wait a while before introducing eggs and milk to her (he said Soy should be fine). However, I'd like to be able to make a good-tasting cake for her first birthday (this Tuesday).

I baked wacky cake for Haley's first birthday. It's very yummy. Not sure if this is the same recipe, but there's no eggs or milk in this.

I have found some great recipes on the Lowfat Vegetarian Recipe Archive - http://www.fatfree.com

Here are all the cake recipes: http://www.fatfree.com/recipes/cakes/

You'll want the ones marked "vegan." Applesauce is the key to moistness in most of these.

Have you actually tried them, though? If so, any you would specifically recommend?
I'm glad I did a trial run on the one I planned on doing Tuesday morning, because it turned out to be nasty.

I actually make the wacky cake recipe too but a vanilla variation of it. I usually make it as cupcakes. You should be able to find pre-made frosting that is free of dairy and egg.

Wacky Cake - Chocolate
1 1/2 c flour
1 c sugar
3 Tbsp cocoa powder
1 tsp baking soda
1/2 tsp salt
1 tsp vanilla
1 Tbsp vinegar
5 tbsp oil
1 cup water
Combine dry ingredients in mixing bowl and mix thoroughly. Mix wet ingredients in a separate bowl and stir to combine. Add wet ingredients to dry ingredients and mix until smooth batter. Pour into greased and floured pan or cupcakes. Bake in preheated 350F oven 35 minutes for until tests done (about 20 minutes for cupcakes).
Vanilla:
- omit cocoa. Double amt of vanilla.
Spice:
- omit cocoa. Add 1 Tbps pumpkin pie spice.
Orange:
- omit cocoa & vinegar. Substitute OJ for water

You can also check Peanut Allergy.com in the Recipes discussion thread. It's a board for PA individuals and parents of PA kids, but many kids with PA have other food allergies as well (most common being egg). You'll find lots of recipes for dairy and egg free foods.

I made a vegan chocolate cake years ago and it was good, and I am 95% certain that it was from this recipe collection. (I personally like their fruit and veggie quickbreads - I've been making one of their pumpkin quickbreads for years, and it is tasty.)

I might be too late but I just take boxed cake and do an egg substitute for it (1.5 tbspoon water, 1.5 tbspoon vegetable oil, 1 tsp baking soda, per egg, i mix all together and add to the batter). I made a duncan hines devils food cake 2 weeks ago and it was awesome. I know some boxed mixes have milk so you need to read the sides to find one without milk.

Oh and Chantal's bakery in Sterling does allergen free cakes. I had an egg free made for Aaron's second birthday and it was delicious. They could probably work with you to make something for little ragu.
